adventures and nutella.

after a 5:45am wake up and a four hour bus ride, i finally arrived in new york this morning! while i did come to new york for fun and to visit my roommate, one of the things that i was most looking forward to doing here was EATING. new york is known for its food (after all, it does have its own tab on serious eats). but first, upon arrival, my roommate and i decided to bake some nutella cupcakes with nutella/cream cheese frosting (using a recipe adapted from tartelette). Y-U-M. YUM.

cupcakes:

  • 125g butter at room temperature
  • 1/3 cup light brown sugar
  • 1 tablespoon ground coffee
  • 2 tablespoons milk
  • 1/4 cup Nutella
  • 2 eggs
  • ~3/4 cups flour
  • 1/4 cup cornstarch
  • 1 teaspoon baking soda
  • pinch of salt

preheat the oven to 350F and line 12 muffin tins with cupcake liners. with an electric mixer, whip the butter with the sugar until it becomes light and creamy. putting the mixer on a lower speed, mix in the coffee, milk, and nutella. add in the eggs, one at a time, blending after each mix.

in a different bowl, mix together the flour, cornstarch, baking soda and salt and then slowly mix together with the butter-nutella mixture. divide evenly into the cupcake liners and bake for about 20 minutes. let them completely cool before frosting them.

frosting:

  • 8 ounces cream cheese at room temperature
  • 2 tablespoons butter at room temperature
  • 1/4 cup powdered sugar
  • 2 ounces nutella (about 1/4 cup)

whisk together the butter and the cream cheese until smooth. slowly whisk in the powdered sugar and then the nutella until everything is mixed together.

we didn’t have any pastry bags and didn’t want to spread on the frosting using a knife, so we made make-shift frosting bag things with ziploc bags! my roommate randomly had pastry frosting tips lying around so we decided to put those in ziploc bags to help us frost the cupcakes!

these frosting bags worked out SO well. our cupcakes came out soo pretty! they were perfectly swirled with frosting that tasted absolutely delicious. while it may not have been the healthiest of frostings, it was SO good. i think it could have done with a little less cream cheese and a little bit more nutella, but that’s just me.

so cute! and then, just as a fun touch, we decided to sprinkle some cocoa powder on the others for an added effect. 

while the frosting was definitely moist, i must say that the cupcakes were a little bit drier than i had hoped.  the nutella flavor was really strong (and super good!) but i think that without the frosting, the cupcakes would not have been as good. i would suggest adding another tablespoon of milk to the recipe! oh and by the way, the coffee made the batter smell sooo good. so good, in fact, that my roommate and i decided to lick all of the spoons that we used to mix the batter. mmmm.

as with other food adventures that i have had in thus far on my first day in new york, i had my first jamba juice! peach perfection: it was perfection indeed. the perfect refresher after shopping. and we passed by a really cute cupcake cart and got a mini oreo cupcake and a mini chocolate peanut butter one. awesome. and of course, i finally got some peanuts from a nuts 4 nuts cart. SOOOO good. and sooo addicting.
